Ingredients
Crust
2 cups flour 1 cup powdered sugar
1 cup butter
MIX CRUST INGREDIENTS WITH FORK AS YOU WOULD FOR A PIE CRUST.
PAT INTO A 9X13 PAN WHICH HAS BEEN GREASED AND FLOURED. BAKE AT
350° FOR 15 MINUTES.
Lemon Filling
4 eggs 4 T. flour
2 cups sugar 6 T. lemon juice
WHILE CRUST IS BAKING MIX THE FILLING INGREDIENTS. AFTER CRUST
HAS BAKED 15 MINUTES, POUR FILLING OVER CRUST AND CONTINUE
BAKING FOR 25 MINUTES. COOL BARS COMPLETELY.
Cream Cheese Frosting
1/2 cup butter 2 1/2 cups powdered sugar
8oz. cream cheesed, room 1 tsp lemon extract
temperature
MAKE FROSTING BY BEATING BUTTER, POWDERED SUGAR, MILK AND LEMON EXTRACT.
BEAT UNTIL SMOOTH, SPREAD OVER COOLED BARS.
